Forty six years after the first World Congress of Food Science and Technology was held in London in1962, it is our pleasure on behalf of the International Union of Food Science and Technology (IUFoST)
to attend our fourteenth World Congress to be held in the financial center of the world's most populous nation, Shanghai, China.

Three Asian cities have hosted World Congresses: Kyoto in 1978, Singapore in 1987, and Seoul in 2001. Our Congress in 2008 will have the theme"Food for health and wellbeing-where tradition meets the future"and our Chinese hosts will create the opportunity for us to compare and contrast the Chinese tradition of health from beneficial foods and herbs with modern concepts and technologies. The congress will feature presentations from the global supply                                                  chain.

Over the years, IUFoST Congress have developed into an important international forum for food industry professionals-a place where they have a unique opportunity to interact with leading international scientists and engineers and discuss the latest knowledge.

It should come as no surprise that in the year 2008-the very same year the Olympic Games will be held in Beijing-the 14th World Congress of Food Science and Technology will come to Shanghai, arguably, the most vibrant and the most exciting city in China. The theme for this Congress is"Food for health and wellbeing-where tradition meets the future".

Since the Chinese food market has rapidly grown at an incredible annual rate of 27% in the past 10 years and matured, it is no longer unusual to find Chinese food technologists and businessmen collaborating closely with their international colleagues. Simultaneously, Asian foods and diet have attracted more and more attention around the world. China is the perfect setting for this Congress-with a food industry that leads the world in growth, as a country with the longest tradition of pairing food with health, and with the largest number of food professionals in the world. As a traditional, modern, and international city, Shanghai is also the most natural choice as China's premier example of tradition meeting the"cutting edge,"and therefore the best place to discuss Food for Well-Being, showing food from past to present to future.

A major component of the Congress will be the 2008 World Food Expo, hundreds of food companies will join us, and the exhibition will be a great opportunity for you to enjoy the charm of the amalgamation between the oriental and the western food industries, and also an uncommon chance to experience the ebullience of Shanghai and the fantastic eastern foods. This Congress will provide fellow food science experts from around world a rare opportunity to fully comprehend the Asian foods with centuries' old history while, at the same time, constructing the platform for the communication and collaboration between the oriental and western food industries.
